How to Make Butternut Harvest Soup

Perfect for fall, warm up after the football game or with family and friends at the Thanksgiving day table. Notes of cinnamon and clove make this savory, while the maple syrup makes this a touch sweet

Supplies

  • 1 Butternut squash (medium to small)
  • 1 Acorn squash
  • 1 Sweet potato (medium)
  • 1 Onion (large, peeled and chopped)
  • 1 Cup Pumpkin puree
  • 3 Tablespoons Olive oil
  • Salt & pepper (to taste)
  • ¼ Teaspoons Cinnamon
  • ⅛ Teaspoons Clove
  • 1 Quart Vegetable stock
  • ¼ Cups Pure Maple syrup
  • 1 Cup Half and half or light cream
  • Roasting pan for oven and stove top
  • Instructions

    Step 1

    A bountiful harvest of fall produce. Preheat oven to 425f.

    Step 2

    Peel and diced sweet potato, place into roasting pan with 3 tablespoons of olive oil.

    Step 3

    Cut butternut squash in sections and peel. Be careful peeling the squash, the skins are very tough.

    Step 4

    Remove and discard the seeds of the butternut squash, dice and put into roasting pan.

    Step 5

    Cut, peel, and remove seeds from acorn squash. Dice into pieces and place into roasting pan.

    Step 6

    Peel and dice large onion and place in roasting pan. Stir to coat everything with the olive oil.

    Step 7

    Add cinnamon, cloves, salt and pepper.

    Step 8

    Stir.

    Step 9

    Place roasting pan into 425f degree oven.

    Step 10

    Stir every 20minutes for an hour.

    Step 11

    This is ready for the stove top.

    Step 12

    Add 1 cup of pumpkin purée and add 4 cups of vegetable stock.

    Step 13

    Cover and simmer for 30 minutes.

    Step 14

    Ready for blending.

    Step 15

    An immersion blender will turn this rustic looking soup into velvety goodness.

    Step 16

    Beautifully smooth and creamy.

    Step 17

    Stir in 1/4 cup pure maple syrup and 1 cup half and half or light cream.

    Step 18

    Serve! Delicious! It's like "liquid fall" in a bowl. For the bowls, I hollowed out pie pumpkins. It really adds a Wow, to the table.
