How to Make Buttercream Icing - Vanilla or Chocolate

by Zuleika Lambe

Use this recipe to make a vanilla or chocolate buttercream frosting. Possibilities are endless! I even made a Mint Chocolate Chip Frosting from this recipe which was unbelievable!

  • 7 Tablespoons All Purpose Flour
  • 1 ½ Cups Milk
  • 1 Tablespoon Vanilla Extract
  • 1 ½ Cups Unsalted butter
  • 1 ½ Cups Granulated sugar
  • 1 Pinch Salt
  • ¾ Cups Cocoa Powder if making chocolate frosting
  • Instructions

    Step 1

You should probably bake a cake unless you're happy to just sit there and eat all the frosting by itself. Which you may actually want to do once you taste it. 😉

    Step 2

Gather all of your ingredients together.

    Step 3

Pour the milk into a small saucepan and heat over a med-low flame.

    Step 4

Gradually whisk the flour into the milk, stirring constantly until it thickens.

    Step 5

    Whisk, whisk, whisk!

    Step 6

    It should look like this.

    Step 7

    Doesn't that look appetising? 😝

    Step 8

Remove from the heat and add the vanilla.

    Step 9

Now let the mixture cool to room temperature.

    Step 10

Meanwhile, in a large bowl, add your butter.

    Step 11

Add the granulated sugar to the bowl.

    Step 12

Add the sifted cocoa powder. Skip this step if making vanilla frosting.

    Step 13

Now you have to combine it all.

    Step 14

If you have a hand mixer, mix it for about 5 mins, or until light and fluffy. If you forgot to buy one like I did, mix it by hand. If you don't feel like being bothered, get your kids to mix it. 😉

    Step 15

Now add the flour and milk mixture to the bowl.

    Step 16

Beat it like mad until the sugar is dissolved and its the consistency of whipped cream. If it looks like its separating, just keep beating, it'll be okay.

    Step 17

Now you can eat it all! Or......frost your cake with it.

    Step 18

I chose the cake option. Reluctantly. 😞

    Step 19

If you're having a warm day and the frosting seems to be melting a little, just put it in the fridge or freezer until it firms up a bit. Whip it again briefly before using.

    Step 20

My boys couldn't wait for me to chill the frosting, so I forged ahead! Middle completed, now frost the outside.

    Step 21

Just plop it on there and spread it around.

    Step 22

Now eat it all quickly! Or, you can just eat a little and store the rest somewhere cool. Up to you. 😊

    Step 23

Presentation doesn't bloody matter, no ones gonna see it in your belly!

    Step 24

Using this recipe I made a chocolate mint chip frosting for my sons 9th birthday. Just add a few drops of green food coloring, a couple drops of mint oil and some roughly chopped milk chocolate chips.

    Step 25

The best freakin thing ever!! Tasted just like the ice cream!
