How to Make Beetroot, Feta and Chickpea Salad

A divine, healthy and fresh fulfilling salad. Great for BBQ's or a light lunch


  • 160 Grams spinach leaves
  • 1 Can whole baby beetroot
  • 1 Can of chickpeas
  • 100 Grams Feta cheese
  • 60 Milliliters Honey and Dijon mustard vinaigrette
  • Handfull of pine nuts
  • Instructions

    Step 1

    Grab your supplies, while the kiddies are playing cards in the background

    Step 2

    Toast your Pine nuts on a dry pan. I would personally use double the amount as I looovvveee them :-)

    Step 3

    Chop up feta. Add less or more if you prefer.

    Step 4

    Chop up baby beets into quarters

    Step 5

    Rinse and drain can of chick peas. Pick out skins that have fallen off

    Step 6

    Add baby spinach to bowl

    Step 7

    Add rinsed and drained chickpeas

    Step 8

    Add baby beetroot, feta and now cooled toasted pinenuts. Then add approx 60ml of salad dressing or make your own and Enjoy. Healthy, tasty and nutritious... Yum
