Place a few slices of Ginger and scallions in large wok or pot. Then add the Duck and beer.
Add soy sauce, more scallions (as much as you like. I think the more the better) and a little sugar
Add water, cover and bring to a boil
Give a stir and add White pepper.
Reduce the heat and cook until Duck is tender. We actually ended up cooking close to an hour.
add more scallions and taste the sauce.
Give it a check at some point
