Whisk three eggs to make egg wash
Panko bread crumbs
Cut the chicken breast into bite size pieces (I used three breasts)
Dip each piece into egg wash
Then bread crumbs for extra crunch!
Place them on a plate to the side until you coat them all in breading
Heat 1/4 inch of oil into a pan at MEDIUM-LOW heat (if its too hot the bread crumbs will burn). Then place each bite sized piece to fry till it it is cooked. Flip each piece throughout.
Once your desired golden brownness is reach set aside on a separate plate.
Get your sauce ingredients ready while frying chicken.
One part mayo to one part sweet chili sauce with however much Siracha spiciness you'd like! (I use 1 cup mayo, 1 cup sweet chilli sauce)
