How to Make Baked Hasselback Potatoes

  • 5 Baking potatoes
  • 3 Tablespoons Extra-virgin olive oil
  • 2 Teaspoons Chopped garlic
  • 2 Tablespoons Grated Parmesan cheese
  • Pinch of paprika
  • Green onions, diced
  • Instructions

    Step 1

    Preheat oven to 425 degrees Fahrenheit.

    Step 2

    Cover baking pan with foil.

    Step 3

    Slice each potato like this, but do NOT slice all the way down. Slice about 3/4 down as the slices will fan out when baking.

    Step 4

    Place each potato on the baking sheet.

    Step 5

    Chop green onions. Set aside.

    Step 6

    Add oil to a small mixing bowl.

    Step 7

    Add garlic.

    Step 8

    Add Parmesan cheese.

    Step 9

    Add paprika and stir well.

    Step 10

    Spread sauce on top of potatoes. Try to scoop some of the sauce in each slice.

    Repeat for all potatoes.

    Step 13

    Place potatoes in the oven and bake for 45 minutes. If garlic browns too quickly, you can cover the top of potatoes with aluminum foil halfway through baking.

    Step 14

    Remove from oven and transfer to a serving dish. The potato edges will be crisp while the insides remain soft. Sprinkle with green onions. Serve and enjoy!
