Heat up pan with 2 table spoon of oil then add cubed onion and 2 tablespoon of garlic. Cook for 2-3 min.
Add potatoes and cook for 5-7 min. Until it almost cooked.
Add chorizo(this the brand that I used).
It should looked like this when it done. Wait for the mixture to cool down.
Turn up oven to 375F. Prepare your dough and scoop some of the mixture inside.
Fold the dough in half and this how I pinch the dough. You welcome to used fork also.
Beat one egg with one table spoon of water and spread it on top of the empanadas. Baked at 375F for 20-22 minutes.
