How to Make "Bacon Jam Scramble" in a Honey Dew Bowl

My dear friend Sam Lemke inspired this recipe when she FedEx'd me a jar of her homemade bacon jam. Its the first in a series of "Bacon Jam Snacks" that I will be doing in the coming year. Stay tuned !

Supplies

  • 1 Honeydew Melon
  • 4 Large Eggs
  • Fresh Chives
  • 2 Tablespoons Homemade Bacon Jam
  • 2 (Alternative to Bacon Jam) Strips of Bacon
  • 2 Teaspoons (If using fresh bacon) Brown sugar
  • Instructions

    Step 1

    Cut melon in half. Scoop out the seeds and juice, drain juice back into the hole in the melon. Throw out the seeds.

    Step 2

    Bacon Jam Version Heat pan with bacon jam. Scramble eggs until softly done and still moist. Turn off heat. Mix freshly chopped chives into eggs.

    Step 3

    Fresh Bacon Version Fry finely chopped bacon in pan. Scramble eggs with a pinch of brown sugar with the bacon until softly done and still moist. Turn off heat. Mix freshly chopped chives into eggs.

    Step 4

    Load up the melon bowl with your delicious scramble and serve with a spoon.
