The pork, onion, menudo mix spices and bay leaves should be boiled together in 30 cups of water. Add salt to taste at this point- a good 2 1/2 tablespoons should do. You can add more later.
Remember to cube the pork. It cooks faster and easier to eat.
While the pork, onion, menudo spice mix and bay leaves are boiling on HIGH, you can start on the salsa :)
The New Mexico Chiles, Puya Chilies and garlic will make up the salsa- along with 10 cups of water- this will also be boiled, separate from the pork. Make sure you discard the stems from each chile!
This is what the Chiles will look in your pot. DO NOT add the garlic at this point, they will be added raw a little bit later ;) The Chiles should boil for about 30 minutes on Medium.
Once your chiles are boiled, they will look like this.
Add your boiled Chiles, salt, RAW garlic and some of the water from the pot to the blender and blend thoroughly!

Once your pork, onion, menudo mix and bay leaves have been boiling for about an hour, make sure to fish out the bay leaves and onions- no one wants to eat these, they just flavor the broth! ;)
Turn the temp down to MEDiUM. Now add your salsa to the pork. Make sure to use the strainer for this step! Your soup will be free of seeds and chile skins, but will keep all the flavor!
This is my favorite kind of hominy, but you can use any brand.
Now add the hominy. Make sure to triple wash before you add to the pork and chile Pot.
Let your hominy and pork boil for about 40 minutes and it's done!
