How to Make a Yogurt 'Mock' Tiramisu

Supplies

  • 8 Sponge finger biscuits, about 70g in total
  • ½ Cups Espresso coffee (you can use instant)
  • 2 Tablespoons Coffee liqueur or brandy
  • 1 Teaspoon Caster sugar
  • 200 Grams Ricotta Cheese
  • 200 Grams Greek yoghurt
  • 3 Tablespoons Sifted icing sugar
  • 1 Teaspoon Vanilla extract
  • 30 Grams 30g of good quality dark chocolate (grated)
  • Electric mixer
  • 4 250 ml glasses
  • Instructions

    Step 1

    Gather your supplies

    Step 2

    Break up your sponge fingers and cover the bottom of each of your glasses.

    Step 3

    Mix your coffee, liqueur OR brandy, and the caster sugar in a measuring jug to dissolve.

    Step 4

    Pour your coffee mixture over your sponge fingers, and set aside to let them soak.

    Step 5

    Add your ricotta, yoghurt, icing sugar, and vanilla essence in a bowl.

    Step 6

    Beat until creamy and 'smooth'.

    Step 7

    My mixture wasn't very smooth, so I passed it through a sieve.

    Step 8

    Add your ricotta mixture on top of your soaked sponge fingers.

    Step 9

    Sprinkle with your grated chocolate, and leave in the fridge to cool for about half an hour. ( I mixed my chocolate with a little icing sugar )
