Grease your tins, didn't measure mine but they are standard size, 8inch I think
Place the butter/margarine in a bowl , I used part white caster sugar and part golden caster sugar purely because I had ran out of plain white.
I used a hand whisk to cream them together until paler and creamy, scraping down the sides regularly
Adding the vanilla extract
Adding the flour incrementally, and alternately with the eggs
Adding the eggs, that I gently beat first
This is what it looks like when all the ingredients have been mixed together
Place into preheated oven at 180c for 20 mins
This is one half after cooling on the rack.
The end result, with the jam filling and dusting of icing sugar. Simple and delicious. You can use anything you want for the filling, I choose homemade strawberry conserve.
