Ingredients: •Shredded leftover chicken. •Tomatoes, onions, garlic for the chicken sauce. •Yellow onions, red, yellow, green bell peppers for later, but you could use any veggies you have around
Add some oil to a pan & sauté red onions, garlic & tomatoes. Add 1 tablespoon of tomato paste
Add the shredded chicken, some chicken stock. Season it to your taste & cook till the chicken soaks all the flavour

Assemble the sandwich. Italian bread is best, but I only had sliced bread around so I used that
Layer the chicken and vegetables, I used the ingredients listed in step 1 plus lettuce. You could also add cheese & pop it under the grill till it melts
Slice in half, some fries or perhaps a bowl of soup & you have a quick meal
