How to Make a Spicy Thai Pumpkin Soup

  • 1 Pumpkin
  • 1 litre of chicken stock
  • 2 tablespoons of vegetable stock cubes
  • 1 litre of water
  • 2 tablespoon of red curry paste
  • 2 onions
  • 1 can of coconut cream 400ml
  • Instructions

    Step 1

    A shot of what you need. Plus water!

    Step 2

    Note that I doubled the recipe this time so ignore the large quantities of food seen in the picture! I wouldn't want to confuse y'all!

    Step 3

    Slice that pumpkin into segments! It's a big one!

    Step 4

    Skin it all off!

    Step 5

    Cube it!

    Step 6

    Finely slice those onions!

    Step 7

    Heat a pan (or pot) and sauté the heck out of them!

    Step 8

    Add that pumpkin baby!

    Step 9

    Now add the curry paste

    Step 10

    Mixing time!

    Step 11

    Add that stock like its going out of fashion!

    Step 12

    Ads your vegetable stock! Woohoo!

    Step 13

    Put your lids on and simmer for 30 minutes

    Step 14

    Add cream

    Step 15

    Bland it with a hand blender!!

    Step 16

    ENJOY! eat with loads of fresh bread! Note: finished product may appear less attractive than above example.
