You will need equal parts sugar to water. I am using 1 cup of each.
Add your water to the pan. I added my ginger at this time in order to extract as much flavor as possible. When the water began to simmer I added the sugar and stirred until the mixture became clear.
You need to heat the water or you will be unable to dissolve all of the sugar.
Allow your syrup to cool before transferring to the storage container. I like to reuse glass jars. Label your jar for the flavor. I just left pieces of ginger in the syrup. You can eat the ginger too.
