Chop up all vegetables in about the same sizes so they cook evenly.
Sweat off (release flavour) vegetables in olive oil on a low heat for approx 10mins. Stir occasionally to avoid colouring or burning.
Add vegetable bouillon, bay leaf, thyme & sea salt/pepper to taste. Turn up heat & cook for 15mins or until vegetables are tender. Tip: you can add 1/2 cup rice if a thinker consistency is desired.
Place all contents, except bay leaf & thyme, in blender.
Blend until the vegetables are at a smooth consistency.
