How to Make a Salad Into a Meal

Very filling!


  • 2 Cups Green leaf lettuce (or your choice of lettuce)
  • 1 Cup Barley, cooked and drained
  • ΒΌ Cups Garbanzo beans
  • 6 Cherry tomatoes, quartered
  • Shaved Parmesan cheese
  • Chopped basil
  • Salt and pepper
  • Extra virgin olive oil
  • White wine vinegar
  • Instructions

    Step 1

    Add lettuce to a serving bowl.

    Step 2

    Add barley.

    Step 3

    Quarter tomatoes.

    Step 4

    Add tomatoes to salad.

    Step 5

    Add garbanzo beans.

    Step 6

    Add shaved Parmesan cheese and basil.

    Step 7

    Pour 1 spoonful oil over salad. Repeat with vinegar.

    Step 8

    Add salt and pepper. Serve and enjoy!
