by Karin Siöö

Rhubarbs are great. End of story.

  • 120 Grams Wheat flour
  • 70 Grams Oatmeal
  • 200 Grams Sugar
  • 2 Pinches Flake salt
  • 175 Grams Butter
  • 400 Grams Rhubarbs
  • 1 Apple
  • 2 Teaspoons Potato flour or corn starch
  • Instructions

    Step 1

In a food processor, or by hand, mix oatmeal, wheat flour, salt and sugar with diced (cold) butter.

    Step 2

You're done when you have crumbs or pieces of dough.

    Step 3

Here half of the crumbs have been spread out in a buttered pie tin.

    Step 4

Turn on the oven, at 175 C.

    Step 5

Now, chop the rhubarbs and weigh them.

    Step 6

    Chop and dice the apple.

    Step 7

Mix the diced apple with the rhubarbs, and the potato flour (or corn starch).

    Step 8

    Like so.

    Step 9

Add the chopped fruit on top of the crumbles.

    Step 10

Add the remaining crumbles on top of the fruits. Bake in the lower part of the oven for about 50 minutes.

    Step 11

Give it some color to make it crispy.

    Step 12

Serve with vanilla sauce or vanilla ice cream.
