How to Make a Puff Pastry Covered Chicken, Feta &Spinach

Supplies

  • Puff pastry
  • 1 Bag of spinach
  • 1 Block of Greek feta (10x10)
  • 1 ½ Teaspoons Garlic or 2 medium sized cloves
  • 1 Rache of bacon for each basket
  • Olives
  • Olive oil/ canola oil
  • Chicken thigh fillet
  • Instructions

    Step 1

    Sear your chicken thigh fillets

    Step 2

    Let your pastry defrost but not so that it starts softening.

    Step 3

    Place a rash of bacon on a sheet of pastry and make a bed of spinach on top.

    Step 4

    Finely dice your garlic and add to your oil. Season and dribble a little on your chicken.

    Step 5

    Break up and crumble some feta ontop of the spinach then add your (garlic and oil) covered chicken ontop.

    Add some more spinach and feta

    Rap the bacon around.

    Step 9

    Pull in the corners and pinch in till safely covered. Brush on some milk & add in the oven at 180 degrees till golden brown. For a larger basket add 2 small thighs. For a smaller add 1 thigh. Enjoy!

    Step 10

    You can also add sundries tomatoes &olives for extra flavour. I also love making these with sweet chilli, prawns & fetta. With the remaining spinach & feta make a salad with oil & balsamic vinegar
