Cut your bacon into strips, I never eat bacon with the fat on, but each to their own, leaving the fat on will provide a much crisper texture :)

Prepare the other components - tomatoes, mozzarella and red onion, and wash the spinach in a colander! Starting with the spinach, dress the pastry on top of the pesto, then add the other components

Sprinkle dried oregano and oil onto the bake before putting into the oven

Place into a preheated oven at 200 degrees for 25mins

In the meantime, prepare your dressing for your bake

Finally dress with wild rocket, balsamic vinegar and a salad dressing of your choice, I have gone for hellmans 0%fat French dressing as its sweet and compliments the wild rocket, sit back and enjoy :)
