Gather all your supplies and get ready to start!
Add the quinoa and water and cook over medium heat until all water is absorbed.
Keep an eye on it and stir a few times while cooking. Make sure you cover the quinoa with a lid and remove lid only to stir. This takes appx. 15-20 minutes. I chop all my ingredients meanwhile.
Start chopping away......
Rinse corn and black beans.
Looks like all the water has been absorbed. Make sure you remove the lid and set aside.
Place all chopped ingredients in a bowl. They look pretty, don't they? :-) I did decide to add a red pepper for color once I mixed all ingredients.
Gather all your chopped ingredients, corn and black beans.
Don't forget the lime juice!

Lastly, add the olive oil, salt and cumin. I was out of olive oil, but what I had on hand did the job.
