How to Make a Greek and Indian Fusion Meal

Indian style hummus with greek pita bread. Chicken curry souvlaki with lemon basmati rice.

Supplies

  • 1 ½ Cups Chickpeas
  • ⅔ Cups Olive Oil
  • 4 Cloves of Garlic
  • 2 Lemons
  • ½ Teaspoons Red Chilli Powder
  • ½ Teaspoons Black Pepper
  • 1 Teaspoon Cumin Powder
  • ½ Cups Roasted Sesame Seeds
  • 1 Teaspoon Fresh Parsley
  • 2 Small Onions
  • 3 Tablespoons Curry Powder
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Paprika
  • 1 Bay Leaf
  • ½ Teaspoons Ginger
  • ½ Teaspoons White Sugar
  • 2 Chicken Breasts
  • 1 Tablespoon Tomato Paste
  • 1 Cup Plain Yoghurt
  • ¾ Cups Coconut Milk
  • ½ Teaspoons Cayenne Pepper
  • 2 Tablespoons Margerine
  • 1 Cup Basmati Rice
  • 2 Cups Chicken Broth
  • 2 Tablespoons Dried Parsley
  • 1 Package of Pita Bread
  • Instructions

    Step 1

    Blend the roasted sesame seeds until they are a powder consistency

    Step 2

    Place chickpeas, spices, olive oil, lemon juice, sesame seeds in blender. Blend until smooth.

    Step 3

    Place blended contents in bowl. Cover and refrigerate until ready to serve.

    Step 4

    Chop 1 small onion.

    Step 5

    Place on 3 tablespoons of olive oil and chopped onion in a pan and saute.

    Step 6

    Stir in garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar, salt, tomato paste, yogurt, and coconut milk. Bring to a boil. Let simmer for 25 minutes.

    Step 7

    Let simmer for 25 minutes

    Step 8

    Chop up the two chicken breasts in pieces small enough to put on a skewer

    Step 9

    Turn off heat then place chicken breasts in curry.

    Step 10

    Cover the chicken completely with curry

    Step 11

    Place chicken and curry in bowl and cover it. Place in fridge and marinate for 30 minutes.

    Step 12

    Place 1/2 cup onions, margarine in pan and saute onions.

    Step 13

    Add basmati rice, chicken broth and lemon juice. Reduce heat, cover and simmer for 20 minutes.

    Step 14

    Remove the chicken from fridge and place pieces on a skewer

    Step 15

    Barbecue chicken on medium heat. Cook for 12 minutes turning once.

    Step 16

    Remove from barbecue and set aside.

    Step 17

    Stir in parsley flakes

    Step 18

    Cute pita bread into triangles

    Step 19

    Serve hummus and pita bread
