Ok so an omelette isn't the most difficult meal to make but it's quick, easy and packed with plenty of protein which is a great post workout summer meal :-)
Add the oil and butter to a pan, and warm on a medium heat
Whisk three eggs, salt and pepper... Then add 4 quartered cherry tomatoes to the jug
By this time the butter and oil will begin to bubble
Now add the eggs and tomatoes to the pan
Tip the eggs to each side to spread the mixture around, and make the omelette larger...
Flip the omelette when it becomes less runny (the photo is post flipping)
Add cheese (for added flavour) and cook for an extra 30 seconds to a minute
Fold and serve with a fresh salad... Eat and enjoy!
