I used two types of cheddar and parmigiano reggiano. Feel free to experiment with different types of cheese like manchego or other good melting cheeses.
We're going to start with a creamy sauce for the base of the dish. By melting the cheese here it will make sure that there is cheesy goodness in every bite 😊
Melt three tablespoons of butter in a sauce pan.
Add two heaping tablespoons of flour and stir.
Add a quart of heavy cream.
Add your cheeses. I shredded the parm and the sharp cheddar and mixed them in a bowl together before adding them.
And another cheese because that's really the star of this dish!
Stir them all together and add the following: Salt Pepper Garlic powder Onion powder Paprika and a pinch of cinnamon
This will get really thick, so to avoid clumpy sauce reserve a cup of pasta water to add to the sauce.
Add your noodles and stir it all together. I like cavatapi pasta for this because the bends really hold the sauce well.
Transfer to a baking dish. A cast iron skillet is ideal but I'm taking this pan to work tomorrow so I used a disposable aluminum pan.
Add more cheese on top!
Bake in the oven at 350 for 40 minutes covered in aluminum foil. The last 5 minutes uncover and put the broiler on for it to get bubbly and a little brown on top!
