For this fruit crisp, I sliced about 10 med-sized plums into bite-sized pieces. I put them into a baking dish , coated with non-stick cooking spray. Set aside.
Combine the rolled oats with the almond meal, and use a wooden spoon to work out the lumps.
Add one cup of brown sugar and one Tablespoon of cinnamon. Use the wooden spoon to work out the lumps. Add a pinch of salt and mix in with dry ingredients.
Dot the fruit with some small knobs of butter (1/4 stick or 2 Tblsp).
Cover the fruit with the dry mixture and drop on another two Tablespoons of butter knobs.
Bake it in the oven at 350F degrees. Don't fall asleep and let it get too dark. The smell should tell you when to start checking for a golden brown color. I let this one go over one hour.
Let the crisp cool (or not) and serve with a dollop of whipped cream, or vanilla ice cream.
