Cut bacon into strips
Fry bacon in preheated pan; don't overcook as you will be putting in oven with potatoes
Slice potatoes in half long ways (so they are flatter)
Toss in salt, rosemary and olive oil in oven tray
Slice the ends off of peppers and pull out the bit with the seeds from the middle; then slice into strips
Slice lemon into rings
Mix everything into baking tray with some additional olive oil and bake covered at 375* until the potatoes taste done (45min or so)
Unfortunately I forgot to take a picture before eating them so this is a picture of next-day leftovers :( Not so pretty anymore, but it was colorful and delicious last night!
