How to Make a Cookie Sandwich Filled With Cookie Icecream

Using an ice-cream maker 🍨🍪


  • Supplies for the ice cream below:
  • 1 ½ Cups (375ml) milk
  • 1 ½ Cups (375ml) thickened cream
  • 1 Vanilla bean or 1tbs vanilla extract
  • 6 egg yolks
  • ⅔ Cups (140g) caster sugar
  • 115 Grams ctn Mini Oreo biscuits, chopped
  • Supplies for the cookies below:
  • 150 Grams softened butter
  • ½ Cups caster sugar
  • ½ Cups brown sugar
  • 1 Teaspoon vanilla extract
  • 1 egg
  • 1 ¾ Cups plain flour
  • ½ Cups dark chocolate bits
  • ½ Cups milk chocolate bits
  • 1 Punnet of strawberries (2 stawberries per sandwich)
  • Instructions

    Step 1

    Wash your hands well and put on an apron if you would like.

    Step 2

    Get all of your ingredients for your ice-cream out, so you are ready to start cooking

    Step 3

    Place milk and cream into a saucepan and warm on a low heat. Make sure not to boil this mixture. Then wait a couple of minutes for it to cool down.

    Step 4

    While your cream mixture is cooling down...Use a whisk to whisk your eggs-yolks and sugar until thick and creamy. Make sure a skin doesn't form on your cream mixture so continue to stir while cooling.

    Step 5

    Gradually add your cream mixture into your egg & sugar, making sure to whisk it and combine the two slowly.

    Step 6

    Place your mixture into a saucepan on a low heat for 20mins. Use a wooden spoon to mix the mixture. It should look similar to the picture above once finished.

    Step 7

    Important: While you're cooking the mixture you need to make sure that you take it off the heat each time bubbles appear. This prevents your mixture from curdling.

    Step 8

    Stir your mixture until it is completely cooled down. Once it is cooled, place it into a jug (easier to pour ice-cream into the maker). Pour it in, and turn on your machine for 30-40mins.

    Step 9

    Chop your mini Oreos into quarters.

    Step 10

    After 30-40mins turn the machine off. Then add in your Oreos.

    Step 11

    Cover with glad wrap and place into the freezer. Keep in the freezer for 6hours or until completely frozen

    Step 12

    Your ice-cream should look similar to this when complete :)

    Step 13

    Now that you have your ice-cream, put it back into the freezer and start your cookies. Firstly preheat your oven to 180c or 160c (fan-forced).

    Step 14

    Use an electric mixture to beat butter and sugar until smooth. Add in your vanilla essence and mix.

    Step 15

    Sift in half of the flour at a time. This makes it easier to mix the cookie dough.

    Step 16

    Add in chocolate, and mix again. You can choose to either have 1/2cup dark and milk chocolate or 1cup of either. I choose to use 1cup of milk chocolate.

    Step 17

    Lay a tray with backing paper. Then roll your cookies into balls using a tablespoon as a size idea. Making sure to keep a 3cm difference between each cookie. You should have around 17 cookies.

    Step 18

    Cut the edges off your backing paper so it doesn't catch on fire.

    Step 19

    Flatten your cookies using a spoon, then use your hands if needed to smooth them out further. Place them into the oven to bake for 15-18mins or until cooked and lightly golden.

    Step 20

    Take your cookies out of the oven and onto a wire rack to cool down. Once they have cooled, pick out the two cookies that you would like to use to make your sandwich.

    Step 21

    Note: You should only make the amount of sandwiches that you can eat at one time. This is because the ice-cream melts and can get very messy. I will show you how to construct one now...

    Step 22

    Place a scoop of your ice-cream into a small bowl. Then collect 2 strawberries. Cut lines (not all of the way through) into both strawberries. Then carefully spread out each berry.

    Step 23

    Now get another scoop of ice-cream to fill your sandwich.

    Lightly dust with icing sugar.... 💫 and woola!! You have a choc-chip cookie sandwich filled with cookies & cream ice-cream!!

    Enjoy your delicious dessert 😋!! You can store your left over cookies in an air tight container.
