Measure 2 cups of heavy whipping cream. Add it to a mixing bowl along with the entire box of pudding mix.
Mix on med-high speed until it thickens.
You should end up with stiff peaks after about 3 minutes.
Grab some caramel (homemade or ice cream topping), your mousse and the dessert cups. I found these at Walmart in the baking aisle.
Place the cups on a serving dish. Add your caramel and mousse to piping bags (or sandwich bags with one corner cut off).
Add a thin layer of Caramel in the bottom of the cups.
Top with the mousse and a thin drizzle of caramel.
Drag your veggie peeler along the chocolate bar to add chocolate shavings to the top.
