Dice red potatoes, onions and bell pepper.
Sauté in butter over medium high heat for about 4 minutes and then turn down heat and cook until potatoes are just about soft. Season potatoes with garlic pepper, salt and crush red pepper.
Remove potatoes and add more butter and sauté sausage. If already precooked, just heat through. If raw, cook following directions on package. (For vegetarians: I used precooked meatless sausage)
Meanwhile prepare your baking dish with the pie crust. Press against sides to cover dish. Poke a couple of holes with a fork in the bottom and sides of crust. Bake crust in 350degree oven a bit. 5 min
Combine sausage and potato mixture.
Combine eggs and whipping cream in a blender until mixed well.
The pie crust should look like this after baking a bit. Just enough to get the crust started, so it's cooked all the way through in the oven.
Layer the sausage and potatoes in the dish.
Top with cheese. And repeat for a second layer of sausage and potatoes; then cheese.
Pour egg mixture into dish.
Top with cheese and bake for 35-40mins. Or stick a fork in the middle until comes out almost clean.
Remove from oven and let rest. Eggs will continue to cook and firm up. If you like your eggs cooked hard, you can cook until fork comes out clean. Enjoy!
