How to Make 2 Ingredient Banana Egg Pancakes

  • 1 Banana
  • 2 Eggs
  • 1 Tablespoon Coconut Oil
  • 1 Pinch Cinnamon (optional)
  • 1 Teaspoon Pure Vanilla Extract (optional)

    Step 1

    Gather your ingredients. This step is quick.

    Step 2

    Mash banana.

    Step 3

    Crack in two eggs.

    Step 4

    Mix in vanilla and cinnamon (optional).

    Step 5

    Whisk together.

    Step 6

    Heat coconut oil in frying pan, over medium heat. You could also use butter, olive oil or another oil of your choice.

    Step 7

    Pour batter in frying pan to form your pancake. The edges will start to turn up and the top will begin to bubble when it's time to flip.

    Step 8

    After it's flipped, keep on heat until cooked through - about another minute or two. Serve with maple syrup, honey, fresh fruit, peanut butter or any of your favourite toppings. Enjoy!
