This pasta salad makes for an excellent starter or the main dish. This will be sufficient for upto 3 people. You can adjust the amounts of almost everything according to your taste!

Prepare the flavouring paste: Coarsely grind or finely chop mint or coriander, 2 green chillies, olives and jalapeños, a pinch of salt and half a tsp sugar.

Chop: - 1 carrot - 1 onion finely chopped - 1 cup snow peas halved - 1 cup chopped pumpkin or 1 sweet potato. - half beetroot. - 1/2 cup capsicum or sweet peppers. Cut separately 1 tomato.

Stir fry the vegetables EXCEPT the tomato and cucumber in a pan for 3-4 minutes. To do this add a tsp of oil and a tbsp of lemon to the vegetables and heat them on high heat for 3-4 minutes.

In a saucepan, bring 4 cups of water to boil. Add a tsp of oil and a pinch of salt. Add 1 and a 1/2 cup of elbow shaped pasta. Boil pasta until cooked! Usually takes about 8-10 minutes.

Once the pasta is cooked, drain and place in a large bowl.

Add 1 and half cup of yogurt, some pepper and some salt and mix well.

Leave it in the fridge to cool for half an hour or place it in the freezer if you want it cooled faster!
