First, start by washing the Brussels sprouts. Then soak them in cold water 20-30 minutes. This recipe can be adjusted to whatever size you need. I usually use 3-4 lbs of Brussels sprouts to feed 4-6.
After soaking, grab a few out of the bowl and peel away any leaves that are hanging off or not tight against the sprout. They should just pull or peel right off.
Like this....do this to all of the Brussels spouts and replace the old water in the bowl with fresh clean water. Discard anything you pulled off the Brussels sprouts.
Next, trim off the bottom of the Brussels sprouts, being careful not to cut off too much or the Brussels sprout will fall apart.

After they are all trimmed and ready to go, place them back in the bowl with the clean water.
Place them in the microwave and cook on high for 3-4 minutes. I used an upside down plate to cover the bowl so that it steams them while they cook. Make sure your bowl is microwave safe!

While the sprouts are cooking, dice 1 clove of garlic.
After they are done, pull them out and drain the water. Place in the bowl for a third time....no water this time....and add the diced garlic.
Next comes the yummy spices . 1 tsp smoked paprika, 3/4 tsp ground mustard, 1/4 cup grape seed oil, salt and pepper. Don't be afraid to adjust the spice amounts to your liking:)
Add all the spices to the Brussels sprouts and mix well. You want to make sure all the Brussels sprouts are seasoned well.
Next, thread the Brussels sprouts on the skewers. Try to put the same sized Brussels sprouts together so that they will cook evenly.
Place on the grill on medium heat. Because you cooked them a little in the microwave, they will only need 5 minutes per side for a total of 10 minutes.
After you remove the Brussels sprouts from the grill, set them aside to cool and add chopped bacon to the same bowl you used to mix the spices and Brussels sprouts.
It will take about 5 minutes for the sprouts to cool before you handle them.
Grab the skewer at the top, use a hot pad if its still to hot to handle, and slide a fork down the skewer every 3 or 4 Brussels sprouts until they are all in the bowl.
Mix everything again and enjoy! Tip: best if served warm but you can save for later and warm in the microwave, just be careful not to cook them too long in the microwave or they can be mushy.
