Step 1: Make the couscous. Put 1 cup of couscous and 2 cups of boiling water into a heat proof bowl and put a lid on it. The couscous should take about 15 min to absorb the water
Step 2: Prepare the chicken. Lay the chicken on some baking paper. Sprinkle it with oregano, lemon zest, salt and pepper. Cover it with more baking paper and bang it with a rolling pin to flatten it.
Step 3: Cook the chicken. Pour olive oil into a hot pan, lay chicken pieces in carefully and gently cook.
Step 4: Tzatziki. Grate half a cucumber into a bowl. Add a pinch of salt and mix around, then squeeze the juice from the cucumber out and place into another bowl.
Add 1 cup of yogurt to the bowl with the cucumber and mix around. Then chop up some mint and add to the tzatziki. Put tzatziki into a reasonable sized bowl.
Step 6: grab two capsicums and roughly chop them. Then chop some spring onion into thick pieces.
Step 7: put your chopped capsicum and spring onion into a food processor with a few pinches of dill
Step 8: add 2 cups of frozen peas into a bowl and add boiling water. Let them sit.
Step 9: put the couscous, the ingredients in the food processor and the green peas into a large platter and mix them together.
Step 10: cut the chicken into strips and place on top of couscous.
Final step: garnish with more dill as well as some feta cheese
