First I will show you how to dry your pumpkin seeds fast, as I have noticed that dryer ones bake MUCH better. First, carve your pumpkin! We did a vampire, a ninja turtle, and Zelda's Triforce symbol.
Using a strainer, wash your seeds thoroughly and remove all the slimy Pumpkin bits from them the best you can. When they are clean enough, place all your seeds in a deep bowl.
This is a trick I tried out last year and works great and very quickly. Use your hair dryer on low heat to dry the seeds out! You need a deep bowl because the air may blow your seeds around a bit.
Preheat your oven to 300 degrees and then get your choice of oil out. I'm adding just a tablespoon of coconut oil. I've been a freak about using this stuff lately. Mix until all seeds are coated.
After that, pour your seeds into a foiled baking pan. I slightly shake the pan back and forth to spread them out and pretty evenly.
Next, add your salt. This time I'm just going to use a little bit of garlic salt. I just shake a little over the top, stir the seeds up and add a little more over the top. Spread out evenly again.
Roasting time! I worry about burning them so I constantly check them every 5 minutes, tasting them to see if I need to add more salt while baking. I normally bake them for 30-40 mins at 300 degrees.
