How to Cook Yummy and Healthy Collard Greens

Collards are traditionally cooked with lots of meat and sodium. Try this easy healthy alternative that are flavorful and give you a serving of dark leafy greens!


  • 1 Bunch Collard greens
  • 1 Can diced tomatoes-no salt added
  • 1 Can vegetable broth- low sodium or chicken broth
  • ½ Large onion
  • Garlic to taste
  • Cayenne pepper to taste
  • Salt and pepper to taste
  • 1 Tablespoon Olive oil
  • Instructions

    Step 1

    Wash your greens

    Step 2

    Chop greens

    Step 3

    Sauté onion in olive oil till translucent over medium heat

    Step 4

    Add the tomatoes and let cook a few minutes to evaporate some juice

    Step 5

    Add the broth and greens. Cover with a lid. Bring to a simmer and let cook at least 1 hour. They should be soft all the way through the leaf and stems in the center.

    Step 6

    Serve and enjoy!
