This is a slice of winter melon, cleaned off its seeds.
Remove the skin and dice into chunky cubes.
Wash about 3 tomatoes.
Dice them into small salsa-size chunks. I use a chopper.
Dice a couple of small onions.
Chop fresh ginger and green chillies.
Cook the winter melon cubes in a covered vessel with very little water (5 tbsp). If u add too much water, the cubes will get squishy which u don't want. Keep stirring till it is tender.
Heat some oil & add cumin seeds, fresh ginger, green chillies & the chopped onions
After the onions turn translucent, add the diced tomatoes. Mix & cover for 3 mins on medium flame.
Add curry powder (or sambhar powder).
Add the partially cooked winter melon cubes and mix. Add some salt according to taste.
After 2-3 mins, the curry is ready. Serve with rice or roti.
