Cut 1-2 inches off the ends of the water spinach. Then rinse with water. Use knife or hands to break the stems to 3-4 inch pieces. Wash again to remove any dirt.

Heat olive oil in large pan over medium heat. Then add minced garlic and fry till golden brown. This will take about 2-3 minutes.

Add the washed and cut water spinach into the pan in handfuls. If the pan is full, wait till it wilts, then add the rest. Add pinch of salt.

Now toss in the fish sauce and oyster sauce. Make sure the spinach is evenly coated. Stir fry for about 4-5 minutes with the lid on over medium heat.

Sprinkle another pinch of salt to taste. Now it is ready to serve! Enjoy this crunchy and soft, mild greens.
