How to Cook Vegetarian Stew

  • 5 Carrots - any kind
  • 5 Potatoes - any kind
  • 2 Tablespoons Ginger cubes or ginger
  • 6 Cups Red Onions - pearl or big ones
  • 3 Hot peppers/jalapeƱo/chillies
  • 1 Cup Peas
  • 5 Tablespoons Coconut milk powder
  • 1 Teaspoon Salt
  • 2 Water
  • 1 A big pan
  • 5 Curry leaves
  • Instructions

    Step 1

    In a big pan put in everything except peas and. Coconut powder.

    Step 2

    I have used pearl onions 2 bags.

    Step 3

    These are curry leaves. Health benefits of these are manyfold! You can start out with 5 leaves if it's new to you.

    Step 4

    In about 30 mins all will become tender - at this point mash it up nicely.

    Step 5

    You get Maggie coconut milk powder in Asian stores. I don't have the box but try googling it.

    Step 6

    Add little cold water in a cup and put the coconut milk powder in.

    Step 7

    Mix it up! It will become a thick paste.

    Step 8

    Add the peas now.

    Step 9

    Remove from heat and coconut milk paste goes in :)

    Step 10

    And here we go!

    It is very healthy and if you noticed oil free! I have made a lot you can half or quarter it. Enjoy!
