Take two large baking potatoes
Wash the potatoes under a cold tap
Use a fork to prick the skin 3 or 4 times
Coat the skins with olive oil
A generous sprinkle of sea salt helps make the skin nice and crispy.
Place in the oven at 375/220 on the middle rack so the get an even heat all round. They should take between 45 to 60 minutes.
Slice down the centre
Gently squeeze the potato and it will open perfectly
