How to Cook Thai Pumpkin Soup (Vegan)

Supplies

  • 4 Cups Pumpkin Purée
  • 1 ½ Cups Coconut milk
  • 2 Cups Vegetable broth
  • 1 Tablespoon Lemongrass
  • 2 Tablespoons Sriracha sauce
  • ½ White onion
  • 1 Vegetable Oil
  • 1 Tablespoon Margarine
  • 6 Cloves garlic
  • 2 Tablespoons Lime juice
  • Pumpkin seeds (garnish)
  • Spring onions (garnish)
  • 1 Teaspoon White Pepper
  • 1 Teaspoon Ginger
  • Instructions

    Step 1

    White pepper, ginger, and lime juice.

    Step 2

    Sriracha, Earth Balance, pumpkin puree, and lemongrass.

    Step 3

    Dice garlic.

    Step 4

    Dice onion.

    Step 5

    Heat vegetable oil.

    Step 6

    Add butter.

    Step 7

    Add sriracha and lemongrass. Sauté until fragrant.

    Step 8

    Add coconut milk.

    Step 9

    Heat to boiling.

    Step 10

    Add pumpkin purée, spices, and lime juice. Heat to boiling.

    Step 11

    Garnish!
