Trim the fat n cut chicken into 1 inch cubes or even smaller
Add salt n pepper n keep aside for 10mins
Mix in the corn flour to coat all sides
Dip in beaten egg
Fry in hot oil till golden brown
Drain the excess oil n keep the fried pieces aside
Whisk 2gether sugar ,soy,vinegar n tomato ketchup and add 2 the fried chicken in a hot wok.add fried cashews if using. Fry well till the sauce thickens n turns a deeper colour.
Serve hot with any rice or noodle dish
