How to Cook Smoked Turkey, Collards and Veggies Stew

I eat this almost daily - I swap smoked turkey for tilapia fillets. I purchase frozen low fat tilapia. Fresh mushrooms over canned, both scallions and white onions


  • 2 Pounds Collard greens
  • 1 Cup Chopped onions
  • Chopped cilantro - handful
  • 2 Tablespoons Chopped garlic
  • ½ Cups Mushrooms or 1 can
  • ½ Cups Baby carrots
  • 3 Cups Boiled water
  • 3 Pounds Packs of smoked turkey
  • 1 Tablespoon Black pepper
  • 1 Cup Baby spinach
  • 2 Pinches Bitter leaves
  • 2 Pounds Fresh turkey
  • Instructions

    Step 1

    Garlic and veggies in pot with fresh turkey and smoked turkey before adding to collard greens and spinach

    Step 2

    Pot of water with fresh mushrooms boiling just before I add collards, spinach and cilantro.

    Step 3

    Fresh collards! Two bunches. We place in strainer, to prepare to wash

    Take left over greens to be put in with left over spinach and placed in freezer for another day.

    Step 6

    After 30 minutes or more stewing down add to collard green stew.

    Step 7

    Taste test.

    Step 8

    We are tasting and cooking. Larger pots of meat take. Little longer and collards. Split the pots if need be. Most times 1hr 20 minutes and food is done.
