Rinse 2 cups of sushi rice with cold water.
Let the rice drain and dry for one hour.
Add to heavy bottom pot with a lid. Add 2 1/4 cups of water.
Bring the rice to a simmer and set your timer for 15 minutes.
Cover the pot and cook for 15 minutes on low heat.
When the timer rings, just turn OFF the heat and leave the lid on for fifteen minutes. Do not move the pot
Put on wooden tray and spread. Add 4 tablespoons of the special rice vinegar... Blow some air on it until it gets cool enough
