How to Cook Pork Chops Low Temp in a A/S Cook & Hold Oven

Pork Chop in Cook & Hold


  • 1 Double pork chop
  • Salt & pepper
  • 1 Tablespoon Cooking oil
  • ΒΌ Red apple (Braeburn or Red Delicious)
  • 1 Sprig thyme
  • 2 Ounces Pork stock
  • 1 Tablespoon White wine
  • Instructions

    Step 1

    Preheat cook and hold oven to 220F (104C).

    Step 2

    Set internal temp to 110F (43C).

    Step 3

    Set holding temp to 150F (65C).

    Step 4

    Mark pork chop on grill and add all ingredients to sous vide bag. Seal.

    Step 5

    Place in oven and insert probe in the center of the product.

    Step 6

    When cooking is complete remove from the bag.

    Step 7

    And plate.
