Put 9 cups of water an 1 tbsp into medium pot and bring to a boil.
Meanwhile, measure out 1 pound of cornmeal (if you don't have a scale it's alright 1 lb = 2 cups)
Once water is boiling, lower the temperate and VERY slowly add cornmeal and constantly whisk to avoid lumps
Don't worry if you do get lumps. Just keep whisking!!
It should look this when it's done CAREFUL it's hot
Spread polenta onto sheet pan and make it as even as possible
Cover in plastic wrap and place in the fringe to cool for 2 hours
While you wait, take the stems out of the mushrooms and then cut them into bite size pieces (cut them however you like)
Chop up the fresh thyme
Mince the garlic
After two hours, take the polenta out and cut into desired shapes, I did triangles
Place mushrooms and Thyme into sauté pan over high heat
Cook them until they look like this
Then add the wine
Let it bubble away for a minute or two then add the garlic
In a different pan cook the polenta , basically until it's hot or whenever you feel its done
