Boil 2 inches of water with a splash of vinegar (about 1 teaspoon)
Swirl the nearly boiling water into a whirlpool.
Crack the egg into a small bowl. I used a measuring cup.
Pour the egg quickly and gently into the middle of the whirlpool. This helps keep the whites and yolk together in a nice package. Cook for about 4 minutes. Do not let water boil.
Assemble poached egg onto an avocado half and top with your favorite salsa. I used black bean/corn salsa from a local restaurant.
