Cut the bell pepper, mushrooms and red onion into medium-small cubes. Cut the garlic into small pieces, and the chicken into little cubes.

This is a must have for those absolute peanut lovers! If you find it too peanut-y, you can use 1/4 cup of peanut butter instead. I like mine spicy, so I often add more chili and curry paste! Enjoy!
