How to Cook Onion Tomato Egg Curry (Indian Style)

  • 5 Eggs
  • 1 Onions
  • 2 Tomatoes
  • 5 Tablespoons Olive oil
  • ½ Teaspoons Mustard seeds
  • ½ Teaspoons Cumin seeds
  • 3 Dry red chillies
  • ½ Tablespoons Ginger garlic paste
  • 4 Fenugreek seeds
  • 5 Karyapak
  • ½ Teaspoons Coriander powder
  • ½ Teaspoons Garam masala powder
  • ½ Bunches Fresh coriander
  • ½ Teaspoons Turmeric powder
  • 2 Green chillies
  • Instructions

    Step 1

    Boil your eggs

    Step 2

    Onions and tomatoes in equal quantities

    Step 3

    Remove the shell and set aside

    Step 4

    Make vertical slits on the egg before frying them. 2 tablespoon olive oil, add turmeric powder, when the oil is hot fry the eggs to get a golden color and set aside.

    Step 5

    Add little more olive oil, mustard seeds, cumin seeds, fenugreek seeds and dry red chillies. Let them splutter.

    Step 6

    Add onions, green chillies and karyapak also known as curry leaves.

    Step 7

    Fry until the onions are transparent, now add ginger garlic paste, fry till the raw smell is gone.

    Step 8

    Add the tomatoes and fry them on medium heat by covering the lid.

    Step 9

    Until you see the tomatoes fully cooked add little water and cook more. Add red chilly powder, garam masala, coriander powder. And cook it well with the lid on.

    Step 10

    Now add the eggs and cook them for 2 mins or until the gravy thickens. Garnish with fresh coriander.
