In 1 bowl whisk eggs with fork
In another both mix breadcrumbs, cheese, finely chopped parsley, chopped garlic
Cut chicken breast in 2-3 very thin slices
Pound chicken, dip in egg bowl, cover both sides in breadcrumbs & either fry or freeze for later
High heat and cover pan in oil
Add chicken to frying pan
If you add enough oil in the beginning, you don't have to add it later
Flip chicken when the edges are brown- first batch is on high heat.
Line a plate with paper towels to put chicken on after they're cooked.
Layer with paper towels & stack the cooked chicken
