Preheat to 350 F (176 C)
Gather your eggs (2 eggs fill ~5 muffin tins w/ filling) and "mix-ins" of your choice. This morning, I chose spinach, provolone, and tuna. Omega 3's!
Feel free to choose whatever "mix-ins" you want. Fruits, veggies, cooked protein, cheeses...whatever fits your taste and mood!
Spray the muffin tin with cooking spray
Add whatever spices you like. This morning I chose salt, pepper, garlic powder, and paprika.
Add your "mix-ins" first
Pour in your eggs until you fill about 1/2 of the muffin cup. Stir.
Stick it in the oven for ~20 minutes depending on how many "mix ins" you added.
Remove them and let them sit for a minute to cool. See how they puff up nicely?
Enjoy alone or with wing sauce!
