Wash produce and chop up. Crush the garlic.
Heat olive oil in skillet on medium heat.
Add salt according to your taste (I never measure it).
Let the tomatoes cook down. I don't mash them yet.
Still cooking. You can see the liquid and that the tomatoes have broken down some.
Now when tomatoes seem soft that's when I start to mash them. I don't like chunks of tomato. If you do then you can skip this step.
This is the texture I like.
Now time to add the crushed garlic and pepper. You can see there is still a bit of liquid.
Keep cooking until liquid reduces. Like this.
See its much thicker.
Serve warm with pita bread. We normally eat this at breakfast time. Serve with mint tea.
